Horst Schulze, formerly of the Ritz Carlton hotel chain (and a past speaker at Dine
America), was recently quoted in an airline publication on his new venture. His words ring
quite true for the restaurant industry as well. Schulze said, "Many companies prefer to
make money by cutting costs. I prefer to do it by creating excellence."
